Classic crockpot pot roast is the comfort of all comfort food. The classic of all classics. Full of childhood nostalgia. I can smell mom’s kitchen now. The warm cozy flavors that slow cook all day to give you the perfect effortless weeknight meal. 

This mean requires no chopping, dicing or prep – except taking the tops off the carrots, it does not get any easier than this! 

After long busy day, come home or walk out of your home office to slow rendered beef so tender it fall apart at first touch, soft creamy potatoes and the most luxuriously smooth cooked carrots that will make anyone love cooked carrots. It’s a DREAM.

Classic Pot Roast – Beef Options 

It’s easy to get overwhelmed with beef options at the grocery store. You will want to use a shoulder, chuck roast (my favorite) or a bottom round. Some stores have their beef labeled “pot roast”. 

The bottom round is the most lean which means it has less fat to render making it less tender and soft, but it’s just as delicious. 

Lipton Soup Packages 

Lipton soup packages is my secret sauce so to speak. It adds the perfect punch of onion flavor to the entire meal. I switch between onion, beefy onion and beef flavors, depending on what I can find in the store.

If you didn’t grow up in the 80 and 90’s, you may not have any idea of what I’m talking about – I’m talking about these boxes of wham bam flavors. 

Potatoes

Potatoes cooks best when in the beef stock, if you are home, give them a quick stir to move them around if some are popping out to give them all a chance to become fork tender. If you’re not home, you may want to check on them before serving.

Ingredients

  • 2 lbs Beef - chuck roast, shoulder, bottom round see blog notes.
  • 1-2 bunches Carrots - tops removed
  • 1 ½ lb Small Potatoes
  • 1 tsp Black Pepper
  • 2 tsp Garlic Salt
  • 1 TBSP Olive Oil
  • 1 packet Lipton Onion Soup Flavor
  • 2 cups Beef Stock

Instructions

  • In a crock pot, add your beef, carrots, potatoes, pepper, garlic salt, olive oil, Lipton onion packet and beef stock.
    Place a lid on. Set it to four hours on high, 6-8 hours on low.
