In a bowl, add your ground chicken, 1 TBSP of fish sauce and the juice of one lime. Set it aside while you prep your spice bowl.
In your spice and herb bowl combine the remainder 1 TBSP of fish sauce, the juice of two limes, 1 TBSP soy sauce, 1 TBSP of thinly sliced green onions - white part only, 1 TBSP of minced mint, 1 TBSP of minced cilantro, 1 TBSP of minced basil, 1 tsp of red pepper flakes.
In a pan over medium heat, add in your olive oil, ground chicken, garlic and red onion. Break it apart as it cooks all the way through.
Turn off the heat and pour in your spice & herb mixture, stirring to combine evenly throughout. Garnish with green onion. Serve with rice and lettuce.
