In a small oven-safe pan with olive oil, sauté the minced shallot, garlic and salt over medium heat. Watching closely because garlic can burn easily. Cook for about 1-2 minutes until fragrant. Turn off the heat and set aside.
In a bowl, mix together the cream cheese, sour cream, dijon mustard, the shallot and garlic mixture, spinach, mozzarella cheese and Parmesan cheese.
8 oz Cream Cheese, 8 oz Sour Cream, 2 TBSP Dijon Mustard, 10 oz Frozen Chopped Spinach, ½ cup Shredded Mozzarella, ½ cup Shredded or grated Parmesan Cheese
Add the spinach dip back into the oven-safe pan used to sauté the shallot and garlic. Evenly spread out into the pan. Bake at 350F for 20 minutes.
Top the dip with the Asiago Cheese. Bake for another 10-15 minutes until melted and bubbly.

Garnish with a pinch of red pepper flakes (optional).
