Instructions
Preheat the oven to 400F and line a sheet pan (with edges) with parchment paper.
Thinly slice the apples and figs.

In a large bowl, add the sliced apples, figs, cinnamon, brown sugar, bourbon vanilla paste, salt and cornstarch. Toss until coated.
Sprinkle corn meal onto the bottom of the parchment paper on the sheet pan. Add the puff pastry.
½ TBSP Corn Meal, 1 Puff Pastry Sheet - thawed and chilled
In a single layer leaving about ½ inch border around the puff pastry, add the apples and then top with the figs. Fold over the edges. Make sure it is least 1 inch over the filling.In a small bowl, whisk the egg and brush around the edges. Add on the raw sliced almonds and a sprinkle a pinch or two of brown sugar.

Bake at 4ooF for 20-25 minutes. The almond slices should be slightly toasted, the puff pastry golden brown and the apples and figs baked to perfection.
