Everyone loves a good breakfast casserole. This broccoli (green) eggs and ham casserole is so easy, full of flavor and loved by everyone. Make it after the holidays with leftover ham, for a brunch, a potluck or lean into the Dr. Seuss theme for teacher appreciation breakfast.
Green Eggs and Ham
This casserole is made with classic ingredients and comes together easily. It’s the perfect quiche-egg casserole filled with broccoli, ham, cheese and frozen hash browns.
Eggs & Milk – The base of the ccv asserole is the same ratio you would use for a quiche. 6 eggs to 3 cups of milk. I used regular 2% milk. To make it more rich and creamier in texture you can use whole milk or even half & half.
Cheddar Cheese – I used a sharp yellow cheese. You can use any of your favorites. Mild cheddar, pepper jack, Colby jack, Vermont cheddar or a combination would all be delicious. For the best quality and flavor, shred off the block.
Cooked Ham – This recipe is the perfect way to use ham leftovers. If you don’t have leftovers, a fully cooked ham steak would work too! The recipe uses 1 cup of chopped (bite size) ham pieces.
Broccoli – Fresh broccoli florets.
Frozen Hash Browns – Grab a bag of the shredded frozen hash browns from the grocery store.
A Fluffy Egg Casserole
These baked eggs are soft and fluffy. With a soft buttery texture they melt in your mouth. Adding in sweet ham, broccoli, sharp cheese and shredded potatoes is the perfect bite, an easy crowd pleaser.
Add Hot Sauce!
If you always add hot sauce to your eggs, this is a no brainer. But if you shy away from Tabasco, now is the time to add a few dashes to your broccoli (green) eggs and ham casserole. It is magic.
Broccoli (Green) Eggs and Ham Casserole
Ingredients
- 6 Eggs
- 3 cups Milk (2%, Whole or Half & Half)
- 1 cup Sharp Cheddar Cheese - shredded off the block
- 1 cup Cooked Ham - chopped into bite size pieces
- 1 ½ cups Chopped Fresh Broccoli Florets
- 1 tsp Salt
- 1 tsp Black Pepper
- 16 oz Frozen Shredded Hash Browns
Instructions
- Preheat the oven to 350F and spray your 9 x 13 casserole dish with non-stick cooking spray, set aside.
- In a large bowl, whisk together the eggs and milk.
- Add in the cheddar cheese, ham, broccoli, salt, pepper and hash brown. Stir to combine all of the ingredients together evenly.
- Pour the egg milk into the prepared casserole dish.
- Bake at 350F 60-75 minutes until the eggs are done.
