Honey Chicken and Ginger Garlic Rice

You can go ahead and add this honey chicken and ginger garlic rice to your one-pot favorite weeknight meals. This quick weeknight meal has a ton of yummy fresh flavors, is super easy to throw it all together and the kitchen clean-up is a breeze. Serve it with a side salad or your favorite vegetable.

Honey Lemon Chicken Marinade

The key to juicy flavorful chicken is to use a marinade. The longer it marinades the deeper the flavors. I recommend at least one hour, but prepping it the morning before starting your day would be best.

You can marinate and defrost AT THE SAME TIME. Like me, if you’re thinking about dinner and find yourself wanting to marinade chicken, but it is still frozen, this is for you. Just pop the frozen chicken in a food safe ziplock bag with the marinade (recipe below) and kill two birds with one stone – defrost and add flavor.

This is sooooo good. I am obsessed. Fresh ginger and garlic grated baked into the white rice and then fluffed with lime is so so so good. The layers of flavors are fresh, light and delicious, I’d be lying if I said I didn’t eat it right out of the pan when doing the dishes after dinner.

This honey chicken and ginger garlic rice recipe calls for it bake in the oven. To make rice in the oven it is important to cover it tightly. I covered my oven-safe pan tightly with foil, a lid would also work. Just leave the lid on and don’t check it, trust the process. This method gets perfectly flavorful, fluffy rice every time.

This rice would also be delicious as a side with grilled chicken or white fish. It’s simple to make only the rice! In an oven safe pan or casserole dish, add in the 2 tbsp of butter (cubed, unmelted) and skip to number 4 in the recipe.

When a Recipe Calls for White Rice

There are several types of white rice. When a recipe calls for white rice, it usually means enriched long grain white rice. At the grocery store, there is usually a general enriched long grain white rice, Jasmine or Basmati white rice. All three of these options would work.

Ingredients

  • 1.5 lb Chicken Breasts 2-4 pieces
  • 2 TBSP Butter

Honey Chicken Marinade

  • ¼ cup Honey
  • Zest and Juice of one Lemon
  • ¼ cup Olive Oil
  • 1 tsp Salt

Ginger Garlic Rice

  • 1 cup Rice
  • 1 Shallot - thinly sliced
  • 3-4 cloves Garlic - grated/zested
  • 2 TBSP Fresh Ginger - grated/zested
  • 2 tsp Salt
  • 3 cups Water
  • 1 Zest and Juice of a Lime

Instructions

  • Marinade the Chicken: In a food safe ziplock bag or shallow bowl, mix together the marinade ingredients and add the chicken. Marinade for at least one hour, the longer the better.
    You can defrost and marinate the chicken at the same time - see blog notes.
    1.5 lb Chicken Breasts, ¼ cup Honey, Zest and Juice of one Lemon, ¼ cup Olive Oil, 1 tsp Salt

  • Preheat the oven to 425F.
  • In an oven-safe pan, melt the butter over medium heat. Once the butter is melted and the chicken breasts top-side down for it to brown. It should sizzle. Brown the top-side of the chicken only, about 3 minutes. Other than the browned top, the chicken will still be raw (see step 5).
    Turn off the heat and remove the chicken.

  • In the same pan as the butter, add in the rice, shallot, garlic, ginger, salt and water. Stir to combine.

  • Add the chicken back into the dish, place on top of the rice mixture.
    Add the top-browned chicken into the prepared ginger garlic rice mixture.
  • Cover tightly with foil or an over safe lid. Bake at 425F for 25 minutes. If after 25 minutes the rice is still watery, bake uncovered for 5 minutes until the water is fully absorbed.
  • Fluff the rice, add in the zest and juice of a lime. Toss to evenly distribute.
