Honey Mustard Grilled Chicken BLT Salad

I’m obsessing over this honey mustard grilled chicken right now, we have it at least once a week and salad dinners are an absolute must have during the warmer weather. This is the perfect weeknight meal, easy to throw together and easy to clean up afterward, not to mention delicious.

The only think-ahead task is to marinade the chicken. Good news, if you didn’t pull frozen chicken out in time and now you need to marinade and defrost at the same time, you can! Talk about multi-tasking.

Bacon Lettuce Tomato – are just the basics

This honey mustard grilled chicken goes with anything – add-in all your favorites!

Avocado: is always a good addition to the BLT and the creaminess will definitely level-up this classic salad.

Cheese: I love feta – the soft, tangy, salty goodness is one of my favorites but you can also use anything you like, blue cheese crumbles, cheddar, or for something softer (probably less thought of but one of my favorites) Monetary Jack.

Croutons: For an extra crunch any grocery-store bag of herbed croutons would be delish.

Salted Sunflower Seeds: Are one of my favorite salad toppings.

Your Choice of Dressing: The recipe below has a house honey mustard dressing but this salad is so versatile that you can use just about anything you love.

My Favorite Marinade

While testing and writing this recipe I fell I LOVE WITH this honey mustard grilled chicken. It’s my current obsession. This marinade adds all the right flavors and when grilled – OMG yum. The chicken comes out juicy, tangy, with a hint of sweet, a hint of heat and the blackened grill marks give me life (and this salad). It’s perfect. Consider yourself warned, this will be your summer go-to chicken.

You can marinade and defrost chicken at the same time. If you’re pulling it out of the freezer late and you want to also marinade you can! Just put the chicken (defrosted or frozen) in a large ziplock bag with the mixed marinade, push it around in the bag to make sure it’s covered and let it sit – at least 2 hours but as long as a day or so.

Honey Mustard Grilled Chicken – Marinade Recipe:
For one 1 lb of chicken – Whisk together
1/4 cup Dijon Mustard
2 TBSP Honey
1/2 tsp Red Pepper Flakes
1/4 tsp Salt
Fresh lemon juice of 1/2 of a lemon – remove the seeds.

  • 1 lbs Chicken (breasts, thighs – your choice)
  • 2 heads Romaine Lettuce
  • 4 slices Bacon – cooked and chopped
  • 1 pint Cherry Tomatoes
  • 1 cup Feta Cheese

Honey Mustard Chicken Marinade

  • ¼ cup Dijion Mustard
  • 2 TBSP Honey
  • ½ tsp Red Pepper Flakes
  • ¼ tsp Salt
  • ½ Lemon- juiced

House Honey Mustard Salad Dressing

  • ¼ cup Dijion Mustard
  • 2 TBSP Honey
  • ¼ tsp Salt
  • ½ Lemon- juiced


  • Whisk together the honey mustard marinade. In a large plastic ziplock bag add your chicken and the marinade. Set it aside for at least 2 hours – up to 1 day.
  • Heat up your grill to medium – high heat. Grill your chicken – start with the top down so that the "presentation side" has good looking grill marks.
    Do not scrape up the chicken to flip, it will naturally release from the grill (without burning) when it's ready to flip to the other side, cook about 3 minutes on each side. Once both sides have been grilled, you can move it to a cooler area on the grill – off of direct heat. This way you can continue to cook until the internal temperature if 165F without burning the outside of the chicken.
  • Chop up your romaine lettuce, halve or quarter your cherry tomatoes. In a large bowl, toss your lettuce, bacon tomatoes, and feta. Add your grilled chicken, top with the house honey mustard dressing (or your favorite).
