Cinnamon Apple and Fig Almond Crusted Galette

This cinnamon apple and fig almond crusted galette is the best way to use your freshly picked apples. The sweet cinnamon apples with the soft jammy figs and a lightly toasted almond crust makes for the perfect treat. We are making apples the star of fall.

Cinnamon Apples and Figs

The fall is a great time for apples and figs. With a sprinkle of cinnamon and brown sugar they are irresistible.

I read somewhere once that you’re an adult when you know what type of apple you love. We are a Gala apple family. They are sweet, mild and crisp. Perfect for baking crisps, pies and galettes. Fuji is another type that is similar to Gala.

Fig season varies depending on where you live. On the East Coast it is August – October. They are firm when ripe (similar to an avocado) and they will have a purple/red color on the inside. If you bite into a fig they are sweet and jammy soft.

This galette perfectly pairs the crisp apple with a jammy soft fig for the most amazing texture.

Trader Joe’s Bourbon Vanilla Bean Paste

Trader Joe's Bourbon Vanilla Bean PasteOkay okay okay, I have something controversial to admit. I do not go to Trader Joe’s for their brand or speciality items. I shop there primarily for affordable organic produce and cheeses. But every once in a while I will stop to browse their items and will find a gem hidden on the shelf (see the my other recipes – Hatch Chicken Bake & Cinnamon Sugar French Toast). This browsing led me to find this Bourbon Vanilla Bean Paste – it smelled incredible and it has the most amazing flavor with actual bean specks.

If you don’t have a Trader Joe’s or if you want to skip this – I get it and I have a plan. Amazon also sells bourbon vanilla extract!! To keep it extra simple, for this cinnamon apple and fig almond crusted galette, skip the bourbon and add in a splash of vanilla extract (2 tsps). To get the same look, scrape in a vanilla bean.

My Favorite Store Bought Puff Pastry

For galettes, I like to use this store bought puff pastry. It’s a little thicker and wider than the other brands. It really holds up to the the ingredients and doesn’t get soggy.

Ingredients

  • 5 Apples
  • 16 oz Figs (about 2 cups)
  • 2 tsp Cinnamon
  • 3 TBSP Brown Sugar (and a pinch extra for the crust)
  • 2 tsp Bourbon Vanilla Paste or Vanilla Extract see blog post
  • ¼ tsp Salt
  • 1 TBSP Cornstarch
  • ½ TBSP Corn Meal
  • 1 Puff Pastry Sheet - thawed and chilled see blog post
  • 1 Egg
  • 2 cups Sliced Raw Almonds

Instructions

  • Preheat the oven to 400F and line a sheet pan (with edges) with parchment paper.
  • Thinly slice the apples and figs.

  • In a large bowl, add the sliced apples, figs, cinnamon, brown sugar, bourbon vanilla paste, salt and cornstarch. Toss until coated.
    2 tsp Cinnamon, 3 TBSP Brown Sugar, 2 tsp Bourbon Vanilla Paste or Vanilla Extract, ¼ tsp Salt, 1 TBSP Cornstarch

  • Sprinkle corn meal onto the bottom of the parchment paper on the sheet pan. Add the puff pastry.
    ½ TBSP Corn Meal, 1 Puff Pastry Sheet - thawed and chilled

  • In a single layer leaving about ½ inch border around the puff pastry, add the apples and then top with the figs. Fold over the edges. Make sure it is least 1 inch over the filling.
    In a small bowl, whisk the egg and brush around the edges.
    Add on the raw sliced almonds and a sprinkle a pinch or two of brown sugar.

  • Bake at 4ooF for 20-25 minutes. The almond slices should be slightly toasted, the puff pastry golden brown and the apples and figs baked to perfection.
