It is a fact that a cool cucumber margarita is all you’re going to need this summer. They are fresh, refreshing, simple and total summer vibes, perfect for pool side. When I say refreshing I mean absolutely, the most ever refreshing margarita you will ever have.
Last year, our garden was overrun by cucumbers, we needed a work-from-home weeknight cocktail, and this cucumber margarita was our favorite go-to and still is for these warm summer nights.
Very Simple Ingredients
These cucumber margaritas have very simple ingredients. For a full pitcher – that makes 6 glasses you only need one cucumber, store bought margarita mix and tequila! If you want to skip the alcohol, you can add in a sparkling soda/water to make it a virgin cocktail.
Let’s talk about store bought margarita mix. There are a lot out there on the shelves, and if you ask my opinion, I think a lot of them are too sweet and have such an artificial flavor which I do not enjoy. I love margaritas on the rocks so I’m always looking for the most simply delicious mix to have them at home.
After many at-home margaritas, I found my absolute favorite, with easy simple ingredients, is made by Stirrings, their Simple Margarita is just the best, I cannot recommend it enough. They even have a 5 calorie option.
Cucumber Margaritas – Cucumber Pulp
Cucumbers have seeds and when blended, create a pulp. When you chop your cucumbers, you can remove the seeds as you see them.
To minimize the pulp, there are a few options, you can pour your margarita through a strainer or because the pulp rises to the top of the pitcher, you can scoop some out or vigorously stir it in before serving.
I use a straw which helps overcome the sipping of pulp.
Cool Cucumber Margaritas
Ingredients
- 1 Cucumber
- 2 cups Store-bought Margarita Mix See blog notes
- 6 shots Tequila
Instructions
- Peel and cut your cucumber into large chunks.
- In a blender, combine your cucumber and margarita mix. Blend until smooth.
- Stir in your tequila.
- Optional: Strain or using a spoon skim the pulp off the top.
- Serve over ice.
