French toast nuggets are my new favorite thing. If you are like me and usually crave a savory breakfast but feel like youβre missing out on something sweet, these little nuggets are genius! You can now have the best of both worlds. They are the perfect ratio of tangy buttermilk to cinnamon-sugar sweet with a crispy fried French toast crust and a soft fluffy middle. Ready to sprinkle with powdered sugar or dunk into syrup.
They are also perfect for weekend brunch, potlucks or even brinner!
French Toast Nugget Inspiration
I cannot take full credit for the concept of French toast nuggets. They were on a menu at on one of my favorite breakfast places in DC. Brad and I stopped there on the way to our hotel before a wedding. I was both starving and indecisive β I ordered more than what was necessary for two people but I made sure to grab the French toast nuggets for something sweet to my two savory egg sandwiches. They hit the spot and I was instantly inspired to find a way to make them at home.

Quick and Easy
This is an air-fryer recipe and you can now make an entire loaf of brioche into perfect little French toast nuggets in less than 20 minutes. The nuggets only take about 5 minutes, depending on the size of your air-fryer you will have to work in batches so that the nuggets lay in one layer without touching. When I did it, I had 3 batches of nuggets.
Making Nuggets for a Party of One
If youβre making them for a party of one or two, you can divide the recipe into half and only do one round of nuggets for an easy (but impressive) weekend breakfast.

French Toast Nuggets (Air Fryer)
Equipment
- Air Fryer
Ingredients
- 1 Loaf Brioche Bread (16-17 oz)
- 2 cup Buttermilk
- 2 Eggs
- 1 TBSP Vanilla
- 1 TBSP Cinnamon
- 3 TBSP Brown Sugar
- Powdered Sugar
Instructions
- Preheat the Air-Fryer to 425F (5 minutes).
- Cut up the brioche bread into large bite size pieces and set aside. In a shallow dish, whisk together the buttermilk, eggs, vanilla, cinnamon and brown sugar.1 Loaf Brioche Bread, 2 cup Buttermilk, 2 Eggs, 1 TBSP Vanilla, 1 TBSP Cinnamon, 3 TBSP Brown Sugar
- Once the Air-Fryer is preheated, remove the basket. Spray the basket with cooking spray. Quickly dunk pieces of the brioche bread into the prepared French toast buttermilk-egg mixture. Coat all sides of the pieces but do not soak in the mixture. Once the pieces of brioche are coated, place in a single layer on the bottom of the air-fryer basket making sure they do not touch. Air-Fry at 425F for 5 minutes.
- Add the French toast nuggets to a serving dish and repeat step 3 until all of the nuggets are made.
- Using a small fine mesh strainer, sprinkle powdered sugar on top.
