Whoever decided to pair bacon, egg and gouda together needs to win a Michelin star. So incredibly delicious, crispy bacon, warm fluffy eggs with a mild creamy cheese, but now with a bag of frozen tater tots tossed in, it is the breakfast casserole of champions.
This bacon, egg, and gouda casserole is ideal for weekends, holidays, potlucks. It’s so good served warm or at room temperature. An instant crowd pleaser.

Clearly, I didn’t discover this magical elite combo, someone else did and Starbucks created the wheel. Inspired by their egg bites, here we are. I decided to turn it into the perfect bacon, egg and gouda breakfast casserole and it was the best decision ever.

Simple is Best
This bacon, egg and gouda breakfast casserole has only a few simple ingredients which makes it super approachable and affordable(ish). Gouda cheese can be a little pricey, I have found that Trader Joe’s appears to be the cheapest gourmet cheese in town.
With six eggs and three cups of milk, the recipe creates the fluffiest soft baked eggs. It’s the same ratio to quiche so it will have a similar texture.
Bacon, use whatever bacon or turkey bacon you love. I’m sure a cooked breakfast sausage would also be good. I find it easiest on clean up to bake the bacon, if you do this you want to lay the bacon out in a single layer on a cooking sheet with edges. I line mine with parchment paper so that it’s easy to clean off the bacon grease. Bake at 425F for about 10-20 minutes depending on thickness.
Bacon, Egg and Gouda Breakfast Casserole (inspired by Starbucks Egg Bites)
Ingredients
- 6 Eggs
- 3 cups Milk 2% or Whole
- 6 slices Bacon - cooked and chopped
- 0.5 oz Gouda Cheese - shredded (about 1 1/2 cups of shredded cheese)
- 1 tsp Salt
- 1 tsp Black Pepper
- 16oz Frozen Tater Tots
- Fresh Chives
Instructions
- Preheat the oven to 350F and spray a 9x13 casserole dish with non-stick cooking spray and set aside.
- In a bowl, whisk together the eggs and milk.6 Eggs, 3 cups Milk
- Add in the bacon, cheese, salt, pepper and tater tots. Stir until it's evenly distributed.6 slices Bacon - cooked and chopped, 0.5 oz Gouda Cheese - shredded, 1 tsp Salt, 1 tsp Black Pepper, 16oz Frozen Tater Tots
- Pour mixture into the prepared casserole dish and bake at 350F for 60-75 minutes until the egg mixture is done. It may still have a very slight jiggle.
- Remove from the oven and let it rest for about 5 minutes to allow everything to set up. Top with freshly cut chives for garnish.Fresh Chives
