What is Asiago cheese? You may have seen or had Asiago cheese bagels? It has a nutty sweet flavor, a medium-hard cheese that melts amazingly on top of dishes, really giving cheese pull vibes.

With all cheese, fresh off the block is best for flavor and for melting. Major brand pre-shredded cheese is coated to make it self stable. There is two exceptions to this “rule”. I will always use shredded mozzarella cheese found in the normal cheese section of the grocery store unless I need fresh mozzarella for a recipe.

Second, many grocery stores have store-shredded or grated cheese near the fresh cut deli meat area. These usually are shredded or grated off the block in the store so it’s a happy middle. In the same area, if you find Asiago cheese pre-shredded and mixed with Parmesan cheese, it’s a win!

Garnish with fresh rosemary on top or on the serving board to make it picture perfect ready for the holidays.

Garnish with red pepper flakes. It will add a little pop of color and a little kick of spice for the big game.

The internet has a lot of spinach dip recipes, some hot, some cold and most of them have same staple base ingredients. This one has a few extras that add in so much more flavor making this baked creamy Asiago spinach dip your new go-to for hosting, pot lucks, entertaining or just weekend snacking.

Plain Cream Cheese – at room temperature. You can use any kind, or Neufchâtel. Get a block of cream cheese, not the whipped.

Sour Cream – sour cream makes the dip creamy and tangy. You can use any kind.

Dijon Mustard – adds some acidity to break up the extra creamy soft flavors.

Frozen Chopped Spinach – the spinach should be thawed in the refrigerator. When frozen spinach defrosts, there is a lot of liquid in the container, you do not need to pat the spinach dry but try add in the spinach without the excess liquid from the container.

Shallot & Garlic – using an oven-safe pan, sauté together in olive oil until fragrant. The kitchen will smell amazing and this is the first layer of flavor, making the spinach dip pop in deliciousness.

Mozzarella, Parmesan, Asiago Cheeses – the perfect cheese blend for a creamy, nutty irresistible spinach dip.

Ingredients

  • 1 TBSP Olive Oil
  • 1 Shallot - minced
  • 4 cloves Garlic - minced
  • 1 tsp Kosher Salt
  • 8 oz Cream Cheese at room temperature
  • 8 oz Sour Cream
  • 2 TBSP Dijon Mustard
  • 10 oz Frozen Chopped Spinach thawed
  • ½ cup Shredded Mozzarella
  • ½ cup Shredded or grated Parmesan Cheese
  • ½ cup Shredded Asiago Cheese
  • Red Pepper Flakes

Instructions

  • Preheat the oven to 350F.
  • In a small oven-safe pan with olive oil, sauté the minced shallot, garlic and salt over medium heat. Watching closely because garlic can burn easily. Cook for about 1-2 minutes until fragrant. Turn off the heat and set aside.

  • In a bowl, mix together the cream cheese, sour cream, dijon mustard, the shallot and garlic mixture, spinach, mozzarella cheese and Parmesan cheese.
    8 oz Cream Cheese, 8 oz Sour Cream, 2 TBSP Dijon Mustard, 10 oz Frozen Chopped Spinach, ½ cup Shredded Mozzarella, ½ cup Shredded or grated Parmesan Cheese
  • Add the spinach dip back into the oven-safe pan used to sauté the shallot and garlic. Evenly spread out into the pan. Bake at 350F for 20 minutes.

  • Top the dip with the Asiago Cheese. Bake for another 10-15 minutes until melted and bubbly.
