Brie
Brie cheese is a staple for the holidays. It’s mild, soft, creamy, when served warm and melty it’s irresistible, even the hardest to please guests will be excited to see it out. Brie can be found in most grocery stores. You can find it in the shape of a wheel with a soft white rind. Trader Joe’s also sometimes sells it in a log which is handy for this recipe.
Honey, Brown Sugar, Vanilla
We have to balance the mild creamy brie, the tartness of the cranberries with this sweet combo. Honey, brown sugar, vanilla and a sprinkle of cinnamon really brings this tart to life.
Honey comes in all different flavors based on the flowers used to make it. I am ride or die Clover honey, Wildflower honey is too strong of a flavor for me. You can also buy honey without the flower indicated on the jar.
Dump & Bake
This recipe could not be easier. Once the buttery puff pastry is rolled out it is time to rock and roll. Layer on the cut brie, pour on the sweet sugar, honey and vanilla. Dump the fresh cranberries and walnuts then it’s go time. Pop in the oven. Once the cranberries start to pop and the puff pastry is golden brown, pull it out and top with fresh orange zest for the pop of color and brightness.
Sweet Holiday Cranberry Brie Tart
Ingredients
- 8 oz Brie Cheese
- ¼ cup Honey
- 1 TBSP Brown Sugar
- 1 tsp Vanilla Extract
- 1 tsp Ground Cinnamon
- ⅓ tsp Salt
- 2 TBSP Corn Meal
- 1 sheet Puff Pastry thawed in the refrigerator
- 6 oz Fresh Cranberries
- 1 cup Roughly Chopped Walnuts
- 1 Zest of an Orange for Garnish
Instructions
- Preheat the oven to 400F. Line a baking sheet with parchment paper.
- Cut the brie cheese wheel into bite size pieces, about 16 wedges.8 oz Brie Cheese
- In a small bowl, combine the honey, brown sugar, vanilla, cinnamon and salt. Stir until fully mixed together. Roughly chop the walnuts.¼ cup Honey, 1 TBSP Brown Sugar, 1 tsp Vanilla Extract, 1 tsp Ground Cinnamon, 1/3 tsp Salt
- On the baking sheet lined with parchment paper, sprinkle the corn meal and roll out the puff pastry.2 TBSP Corn Meal, 1 sheet Puff Pastry
- On the puff pastry, lay out the brie wedges. Add on the honey sugar mixture.
- Dump on the cranberries and walnuts, making sure to leave about a one inch border edge of puff pastry.6 oz Fresh Cranberries, 1 cup Roughly Chopped Walnuts
- Bake at 400F for 15-20 minutes until the puff pastry is golden brown, the cranberries have popped and the brie cheese has melted. Sprinkle on some fresh orange zest. The sugar mixture will spill over the sides and burn but that's okay! It will break off and not affect the tart - I promise. Let the tart cool on the pan on a wire rack. When it's cool enough to handle, pull the parchment paper with the tart on top off of the baking sheet so it can continue to cool on the wire rack. Cut and serve.1 Zest of an Orange for Garnish
