Overnight Almond French Toast

Overnight Almond French Toast

There is nothing better than waking up in your comfy PJs with a hot cup of coffee and having warm buttery sweet french toast on the weekend. Nothing. Except maybe eating it in bed. This french toast casserole leaves all the heavy lifting to the night before, leaving the morning to pure-sunny-weekend-bliss.

If you’re looking for a simple recipe, and I mean super simple, that promises to be a hit with any crowd, look no further. This is perfect for weekend breakfast, brunch, or even the occasional pot luck.

This recipe is the best because it has a secret ingredient (almond extract- shh) that makes the flavor a little something special, you may even pass up on the maple syrup…maybe.

Ingredients

6 Eggs
2 Cups of Cream
1 Cup of Milk
1 tsp Almond Extract
1 tsp of cinnamon, divided
2 TBSP of sugar
1 Loaf (20oz) of Challah Bread, or similar
1 TBSP of Butter + enough to butter your casserole dish

Directions

In a bowl whisk the eggs. Add in the cream and milk, almond extract, 1/2 tsp of cinnamon and sugar until combined. Set aside.

Cut the bread up into 1 inch cubes, and place in a large bowl.

Pour the mixture over the bread cubes and stir to fully combine.

Cover with plastic wrap and place in the refrigerator overnight.

The next morning, preheat the oven to 425F.

Take your bowl out of the refrigerator and give it a stir. Butter you casserole dish and dice up your TBSP of butter.

Pour the french toast mixture into the casserole pan, top with your diced butter squares and 1/2 tsp of cinnamon.

Bake at 425 F. 30-35 minutes, make sure that the egg mixture has cooked through. The top will also be a little crusty which I love.

WANT EXTRA CRUNCH?? Add almonds. Follow the same prep instructions, however substitute the 1/2 tsp of cinnamon with raw sliced almonds. Evenly sprinkle about 1/2 cup of sliced almonds across the top and with your diced butter. Bake using the same instructions above.
