Easy overnight french toast is a must for a busy weekend, brunch, or hosting overnight guests. Prep is all done the night before, then you pop it the oven and bake in the morning, it doesn’t get any easier or more delicious than this.
Cinnamon Raisin Bread
Using cinnamon raisin bread gives the french toast a little something special. It’s a little outside the box but it gives such a great flavor and it’s so much fun, it will impress even the hard to please guests (or toddlers).
I used a bakery artisan-style cinnamon raisin bread from Trader Joe’s called “Cinnamon Roll Bread”. It was a little dry, may be even day-old-stale which allowed the buttermilk to soak in. Use any kind that you like, you can even skip the raisin if you prefer.
Buttermilk Cinnamon Raisin French Toast Casserole
This casserole is a quick prep making your morning even easier. A few simple ingredients, eggs, buttermilk, brown sugar, nutmeg and cinnamon raisin bread. Once it’s mixed all together, cover it and let is soak overnight. The next morning pour it into a prepared casserole dish and bake.
You end up with a dreamy cinnamon raisin french toast casserole that is fluffy, soft, sweet and tangy with a perfectly crispy edge. My favorite is the corner piece drizzled with syrup.
The best part – there is no standing by the stove, dunking, or flipping. You can wake up and enjoy the morning as it bakes and the sweet breakfast aroma fills the air.
Buttermilk Cinnamon Raisin French Toast Casserole
Ingredients
- 20-24 oz Cinnamon Raisin Bread
- 6 Eggs
- 3 cups Buttermilk
- ¼ cup Brown Sugar
- 1 tsp Nutmeg
- 1 TBSP Butter - cut into cubes (plus enough to smear on casserole dish)
Instructions
- Cut up your bread into cubes.
- In a large bowl, whisk together eggs, buttermilk, brown sugar and nutmeg.
- Combine your bread cubes with the egg and buttermilk mixture.
- Make sure the bread cubes are completely mixed in with your buttermilk mixture. Cover with plastic wrap and refrigerate until the next morning.
- The next morning, preheat the over to 400F. Smear butter on the bottom and sides of the casserole dish.
- Stir your french toast mixture and pour into the casserole dish. Top with your butter cubes.
- Bake for 35-45 minutes until it's cooked through and your preferred crisped doneness.
