These pumpkin spice overnight oats are the perfect start for your fall morning. Full of fall spices, creamy and ready for you. Stir them together the night before for an easy on-the-go breakfast.
Pumpkin Puree v. Pumpkin Pie Filling
This recipe called for pumpkin puree which is only pumpkin. Pumpkin pie filling is pumpkin puree mixed with sugar and spices, mainly used to just be dumped into a crust and baked. Make sure to read the label.
Rolled Oats
There are three types of oats; steel cut, rolled, and instant.
- Steel Cut Oats are not processed at all, this makes them the most authentic in texture and taste, however they usually require cooking to make them the most delicious. They are too textured for these overnight oats.
- Instant Oats are the exact opposite of steel cut oats. They are the most processed and purposely created for fast cooking. They are thin and have less texture. You can substitute rolled oats with instant oats but you will lose a little of that chewy bite.
- Rolled Oats fall in the middle of steel cut and instant oats, thinner than steel cut oats but still hold their texture and shape. Perfect for overnight oats!
No cooking or baking required
These overnight oats require no cooking or baking. When stirred with your favorite milk they become soft and creamy overnight in the refrigerator. You can make them ahead and store them in the refrigerator for about 3-4 days.
Pumpkin Spice Overnight Oats
Ingredients
- 3 cups Rolled Oats
- 3 TBSP Pumpkin Puree (make sure it’s not pumpkin pie filling)
- 3 tsp Pumpkin Pie Spice
- 3 TBSP Brown Sugar
- 3 cups Milk Skim, Almond or Oat – your preference
Instructions
- in a bowl with a lid, add all of your ingredients. Stir to combine. Cover and refrigerate overnight, at leastt 6 hours.
- The next morning, stir and serve. Store in the refrigerator for 3-4 days.
